Required Ingredients to make gourd kofta:
- Gourd (bottle gourd)—500 grams (peeled, cut into small pieces)
- Tomatoes—2 (finely chopped)
- Green chili—1-2 (finely chopped)
- Ginger—1 inch (grated)
- Asafoetida—1 pinch
- Cumin—1/2 tsp
- Turmeric powder—1/2 tsp
- Coriander powder—1 tsp
- Red chili powder—1/2 tsp
- Salt—according to taste
- Coriander leaves—for garnishing
- Oil—1 to 2 tbsp
Method of preparation to make gourd kofta :
Peel the bottle gourd and cut it into small pieces. Keep tomatoes, green chilies, and ginger ready. Heat oil in a cooker or pan. Add cumin seeds and asafoetida. Now add ginger and green chilies and fry lightly. Then add tomatoes and add turmeric, coriander powder, red chili powder, and salt. Cook till tomatoes melt. Now add chopped bottle gourd pieces and mix well with the spices. Fry for 2-3 minutes.
Add half a cup of water, cover, and cook on medium flame for 10–12 minutes (or 1 whistle in a pressure cooker). When the bottle gourd becomes soft and the water dries up, turn off the flame. Add green coriander and mix. Serve the bottle gourd sabzi with hot roti or paratha, or serve with dal-rice. If you want, you can also add boiled chickpeas to it. Do not overcook the bottle gourd, or else it will become very soft. For a healthier version, use less oil.
