Ingredients
Required ingredients to rice dhokla :
- Rice—1 cup (soaked for 4-5 hours)
- Urad dal—1/2 cup (soaked)
- Curd—1/2 cup (sour)
- Ginger-green chili paste—1 tablespoon
- Salt—according to taste
- Eno fruit salt—1 teaspoon (or baking soda—1/2 tsp)
- Oil—2 tbsp
- Mustard seeds—1 tsp
- Green chillies—2 (chopped)
- Curry leaves—8-10
- Sesame seeds—1 tsp
- Water—2 tbsp
Method of preparation to rice dhokla :
Wash and soak rice and urad dal. Grind after 4-5 hours and make a coarse paste. Add curd, ginger-green chili paste, and salt to it. Keep it covered for 8-10 hours or overnight so that it rises a little. Add ENO or baking soda to the batter and mix it gently. Pour the batter in a greased steamer or plate. Steam on high flame for 15-20 minutes. Check by inserting a knife; if it comes out clean, then the dhokla is ready. Heat oil in a pan, crackle mustard seeds. Then add curry leaves, green chilies, and sesame seeds. Add some water and pour this tempering over the dhokla. Cut the rice dhokla into pieces. Cut and serve with green chutney or sweet tamarind chutney. Adding grated coconut and green coriander on top will enhance the taste even more.
